Banana & Walnut Bread

This banana bread differs from most "healthy" banana bread recipe as it's not loaded with cup fulls of coconut flour and coconut oil, adding in unnecessary calories.. This one also make for the "pre-bed snack" dream! Excuse the pun, but the combination of banana, oats and yoghurt leaves the body flooded with tryptophan, is carried across the blood-brain barrier, is converted to 5HTP and eventually to melatonin leading to a beautiful deep night's sleep! What more could you want!


  • 250g oats

  • 2 tsp bread soda

  • 40g walnuts

  • 5 ripened bananas

  • 100g Natural Yoghurt

  • 2 tbsp maple syrup

  • Seeds scraped from 1/2 vanilla pod 


  • Mix dry and wet ingredients separately

  • Add wet ingredients to dry ingredients

  • Add mixture to a bread tin greased with coconut oil

  • Decorate the top with extra banana and walnuts

  • Bake at 180 for 20 mins

  • Cover and bake for further 30-40 mins

  • Ensure a knife passes through the centre and comes out clean
