Broccoli, Pea & Salmon Rice

This is the easiest, tastiest lunch or dinner - And it’s packed full of goodness!

Ingredients - Serves 4

  • 1 head of broccoli, trimmed and diagonally chopped

  • 150g frozen peas

  • 2 x 250g packs ready-to-heat white rice

  • 350 grams poached salmon fillets, flaked (you can also opt for the packets of pre cooked salmon to make this recipe even easier)

  • 100g baby spinach

  • Zest and juice 1 lemon

  • 2 tsp Dijon mustard

  • 1 Tbsp olive oil


  • Season salmon fillets with salt and pepper. Poach or grill salmon fillets (if not using pre-cooked ones). Once cooked flake fish into pieces

  • Cook the broccoli and peas for 2–3 minutes in a large pan of boiling water until just tender and drain

  • Meanwhile, heat the rice according to the packet instructions, then put in a large bowl

  • Add the broccoli, peas, salmon and spinach

  • Put the lemon zest and juice, mustard and olive oil in a bowl and whisk to combine

  • Drizzle over the rice mixture and gently toss to combine

  • Serve immediately sprinkled with ground black pepper
