Eggy Breakfast Muffins!



Never have time for breakfast? These egg muffins are the perfect thing for you!


They can be made in advance, are delicious hot or cold and can be personalised with all of your favourite fillings or whatever leftovers you have in the fridge! They also make for the perfect snack..


We whipped these ones up with some hot smoked salmon, cherry tomatoes and spring onion!


Ingredients (Makes 12 egg muffins)⁣

  • 8 free range eggs⁣

  • A dash of milk of choice (we used whole cow's milk)⁣

  • 150g hot smoked salmon pieces (You could also use bacon, chicken or any other meat or choice)⁣

  • 8 cherry tomatoes, diced⁣

  • 3 spring onions, chopped⁣

  • Chives⁣

  • Handful of spinach leaves, shredded⁣

  • 40g grated cheese (Feta is also a delicious option!)⁣

  • Sea salt & black pepper to taste⁣

Method

  1. Whisk eggs, milk, salt & pepper together in a medium sized bowl⁣

  2. Add all fillings and stir⁣

  3. Grease muffin tray with butter/ spray oil⁣

  4. Pour mixture evenly into tray⁣

  5. Bake @180*C for approx. 10 minutes until fluffy and slightly golden on top!⁣
