Light, fluffy, buttery, chocolately and sweet - What more could you ask for?!
Ingredients (serves 2)
200g self-raising flour
1 ½ tsp baking powder
1 Tbsp caster sugar
Pinch of sea salt
3 large eggs
25g melted butter, plus extra for cooking
Share size bag of M&Ms
Maple syrup to serve
Combine flour, baking powder, salt and sugar in a large bowl
In a jug, whisk together the eggs, milk and melted butter
Using an electric mixer or hand whisk, mix the wet ingredients into the dry and beat until smooth. The mixture should be thick and any lumps will dissolve with a little mixing
Leave the mixture to rest for a few minutes before using
Heat a non-stick pan on a medium heat and melt a knob of butter
Use a ladle to scoop some of the batter onto the frying pan in your desired size of pancake
Sprinkle M&Ms onto the top of the uncooked pancake on the pan. Allow the pancake to gently cook and start to bubble on the surface before flipping it over.
Repeat until the pancake mix is gone
