Homemade Mayo & Coleslaw

 

Mayonnaise
 

Ingredients


•4 (room temperature) egg yolk
• 1 tbsp lemon juice*
• 1 tsp Dijon mustard*
• 1 cup (room temperature) olive oil (Try to choose a non-strong tasting olive oil)

 

Method


• Whisk 4 eggs yolk
• Add lemon juice and mustard
• Whisk
• SLOWLY add olive oil, drop by drop, continuing to whisk
• Add generous amount of salt and pepper (**I tasted after, and ended up adding twice the amount of lemon juice and mustard, so taste and add to preference!)

 

Coleslaw

 

Ingredients

• Chopped 1/2 head white cabbage
• 4 grated carrot
• 1/2 diced red onion
• 3 tbsp mayonnaise
• 1 tbsp lemon juice
• 1 tsp Dijon mustard
• Flat leaf parsley

• Salt and pepper

 

Method


• Chop and grate veggies
• Add 3 tbsp mayonnaise
• Add lemon juice and mustard
• Add salt and pepper
• Garnish with parsley
