Sweet Potato and Sun-Dried Tomato Frittata


Ingredients (Serves 4)

  • 5 large eggs

  • 100g egg whites

  • 250g low fat quark

  • 100g baked sweet potato

  • 50g parmesan cheese (grated)

  • 2 cups spinach

  • 1 large pepper (chopped)

  • 50g sundried tomatoes


  1. Preheat the oven to 180 degrees

  2. Beat the eggs, egg whites and quark together

  3. Add the vegetables and baked sweet potato to the egg mix and mix well. Season with salt and pepper

  4. Top with parmesan cheese

  5. Bake at 180 degrees for 50-55 minutes

  6. At 25 minutes, cover with tinfoil to prevent the cheese burning
