Blueberry Protein Pancakes

 

 

Ingredients

 

  • 40g oats

  • 2 eggs

  • 15g protein powder (Casein or whey/casein blend works best)

  • ½ teaspoon cinnamon

  • 1 teaspoon vanilla essence

  • 1 teaspoon baking powder

  • 50mls milk

  • 60g blueberries

 

Method

  1. Combine all ingredients except the blueberries in a blender and blend

  2. Preheat a non-stick pan or a pan with a small bit of oil (coconut oil or butter)

  3. Spoon the mixture onto the pan to make two pancakes

  4. Cover with a lid and cook at a low heat. Flip once bubbles start to form

  5. Cover again and cook until cooked through
