
Ingredients
80g oats, ground into a flour
40g oats
60g vanilla or chocolate protein powder
15g Rice Krispy cereal
125g peanut butter
115g honey/ maple syrup
1 tsp vanilla extract
125g dark chocolate
Topping: 125g dark chocolate, melted
Optional: 50g white chocolate, melted

Method
Line a small (5x5 inch) baking tin with grease-proof parchment
In a medium-sized mixing bowl, combine the oat flour, oats, protein powder, and cereal and mix until well combined
In a small pan over medium heat, add peanut butter and honey, stirring until the peanut butter is melted and fully combined with the honey. Stir in the vanilla extract
In a separate bowl melt the dark chocolate
Remove both from the heat and pour melted chocolate and nut butter mix into the dry mixture, stirring well until everything is combined
Pour the mixture into the lined tin. Using a spatula, spread the mixture evenly in the pan, pressing down firmly
For the topping, place the chocolate into a microwave safe bowl and heat on high in 20 second intervals, stirring after each interval. If using the optional white chocolate drizzle, melt it in the same way in a separate bowl
When melted, pour dark chocolate over the top of the packed mix using a spoon
Use a spoon to drizzle with white chocolate (optional)
Place pan into fridge and allow to cool for at least 30 minutes before slicing into squares!
